I have settled on a woodworking method similar to your description, and would offer the following suggestions: Consider Josh Finn's torsion box workbench. Quick to build as a starter and essentially two sawhorses that will come in handy. Have a browse of Jim Tolpin's "The new Traditional woodworker" which uses some machines for what Paul Sellers calls "donkey work". https://marcadams.com I attended the nine day course with Paul Sellers and now have facility to make most of what I want.
