Ring ball for wedding, suggestions on finishing

I'm building a "ring ball" for a friends wedding. I have a lot left to do on it, but looking into finishes for it. Anyone have suggestions for finishes? I would like to keep the white (maple) as white as possible to keep the distinction of the pinstripes. I also think it would look decent being semi-glossy or even possibly glossy. My first thought was water based poly semi glossy or even glossy. Put several coats on with matte water poly and finish with either semi-glossy or glossy water poly. I have also gotten the recommendation for shellac, but not sure how clear that will be.
