TransTint and TransFast. TransFast is a bit more fad resistant.
Spray dye to color it. Don't worry about raising the grain...after the 1st coat of shellac the raised grain will be locked in place and easily removed with 220 or higher sandpaper.

I made it a point to seal the edges of my cutting boards with de-waxed shellac. Nice smooth shiny finish easy to redo when the working part of the board needs to be resurfaced.
Paint/varnish stripper will clean a natural bristle brush. May take a few hours of soaking.

Exterior finishes are LESS waterproof and SOFTER than interior finishes.

You need about 40psi to operate it properly... It is spraying correctly when it sprays a round pattern similar to an aerosol spray paint pattern.
Kilz will spay OK, latex paint not so much......
Have you tested SW Kem-Aqua Plus? I know you were not happy using it... it's still my favorite (non post-cat) KCMA certified finish.
Wet sanding is to smooth and polish a film FINISH. Wet sanding bare wood is nothing I would ever think about doing prior to finishing.
A better finish for a working woods surface is mineral oil...

I would use De-waxed Garnet shellac. fast dry, easily repaired, food-safe, hard finish, colorfast (never yellows) pops the grain and enhances the color.
