With having the center unit taller, I would consider making the center unit deeper also. Wouldn't have to be alot, 3 or 4". The countertop could still be one piece just with a little wider center...
Can you find the exact center of the pattern once on each end? You could drill a hole thru these two points on the pattern, making the hole large enough to insert a dowel. Then take a 1X2 or whatever...
