I order some General Finishes water based 'High Performance Polyurethane' for a white oak table i am working on. Mainly for the non-yellowing characteristics, but wondering if this is a good choice for a high use tabletop.

It will most likely work fine.
Don't let anyone try to clean it with windex; keep fingernail polish & remover far away from the finish.
You need to realize that there is no such thing a water-borne or water-based varnish. Varnish by definition is an oil & resin cooked to produce a new molucule known as varnish.
Water-borne finishes are almost exculsively acrylic. A few add a bit of urethane resin to help sales, add a bit of abrasion resistance, and add a bit of amber color.

Finishing is an 'Art & a Science'. Actually, it is a process. You must understand the properties and tendencies of the finish you are using. You must know the proper steps and techniques, then you must execute them properly.
