This is a round lazy susan so standing on end is not really an option. So far I've only put finish on the underside so if painters pyramids leave a dent on that side it's not a big deal. Is it okay to completely finish the bottom before starting on the top, or am I risking warpage?
And there was trouble, taking place...

i would at least put a seal coat (or 2) on both side. before completely finishing one side.

I usually switch back and forth between both sides, at least until the point where the finish starts building on the surface. Once that happens, I'll finish the backs. Let them dry and partially cure, and then finish the "good side" last. Finishing something with waterlox takes a long time compared with some finishes. But hopefully you (or your customers) will be looking at the piece for a very long time, so relatively speaking the extra finish time is not so bad.
