    Nothing at all unrefined about end grain if it's sanded or planed smooth and finished well; probably the majority of the most "refined" dining tables ever made had more end grain showing along the edges than side grain.

    And I agree with Art; use breadboards if you like the look, but keeping a big panel flat is better done by other means.

    Bring your lumber into the house and let it adjust to the temp and climate...Longer the better
