If you are talking about the metal bench dog, yes it is remove able.
The 16" tenon saw is big for the type of work I do. Depending on your work, it may be a one hit wonder for your workbench and then hardly used again. My 2 favorite saws are a 12" Bad Axe and a 14"...
Heck yeah. I like short handsaws as well and prefer using them at the bench (not saw bench). A bit harder to find but they are out there.
Tools for working wood makes a great carcass saw and can be had in xcut or rip.
I don't think it is long for a dovetail saw. Their are no hard rules set in stone. I actually prefer a 12" backsaw for most of my dovetailing. Use it as is and figure out if you like it or not before...
