Several years ago I helped a friend build an airplane. We used a HOT WIRE to cut the hd foam. Worked great with virtually no dust.
I'll second the recomendation on using White Oak but you don't want to use quarter sawn white oak. It tends to splinter which would not be good for a shower seat. Plain sawn white oak would be fine...
