Have you tried Austin Hardwoods? I've seen IPE there before.
use contact cement. coat both the mdf and the veneer. Then lay te veneer on and roll it with a j roller.

I started it in January. so about 2 months off and on. The most difficult part was the pidgeon hole assy. It's 1/2" cherry. I resawed then planed it down. It was a difficult assy to clamp up.
