I used Danish oil on mine. Good protection, easy to fix. I would not use anything that would allow things to slip around on the top.
I found some reclaimed cypress, the down side is there are nails in some of the wood. Is there someone who has purchased a scanner that has had good results?

You might consider drywall for fire safety. Both OSB and plywood burn pretty quickly. Just sayin'
