According to one source, the Les Paul Junior is 1 3/4 inches. This model is not arched, and I believe with the arch the Standard and other current arched models come out at two inches or so. I understand the maple cap is 1/4 inch thick and that is the part that is arched.
If you want to buy a plan, here's a great source.

A Strat body is 1 3/4" thick.
I just measured one of each of mine...the Strat (94 MIA) is 1 3/4" and the Les Paul Custom (76) is 2 1/4" including the arched top.

I'm providing this link because it relates to the plans I mentioned and the question Hal asked. The Les Paul that was measured for the plans was a Les Paul Standard from 1959 and its total body thickness including the arch is 2 13/32 inches.

A carved top Les Paul is 2 3/8" thick at the thickest part (bridge). It is comprised of a 5/8" maple top and 1 3/4" mahogany back. At the edges it's about 1 15/16" thick. Les Paul Juniors and Specials are 1 3/4" thick.
A Strat is 1 3/4" thick.
