If one is using a honing jig on top of a bench stone, won't the stone hone the jig as well as the blade being honed? And eventually wear out the roller, or bearing, or surface of the jig too?

The only way you would live to see that wear out is if the roller stopped. As long as the roller is turning it should never wear out. The surface should also not show any wear due to the roller. It is the friction between the stone and blade that wears away the surfaces. With the bearing/roller that friction is lowered to the point there is no/extremely low wear.
