For woods that have more of a white color versus a tan or yellow, what finish do you use to keep it non yellow? We are looking for something that does not turn a white wood an amber color. Darker is OK, just not amber.

Waterborne clearcoats are colorless, unless the manufacturer adds pigment to make them amber like solvent-borne finishes.
Waterborne acrylic will go on water clear and not yellow over time. In general, it's only waterborne finishes for floors that are tinted to mimic oil based finishes.
