Your post just supports my previous one in another thread that postulates : when one has reached the highest skill level in one's craft the only tool one needs is a rock.
One grit.
Personally I am at one grit now but I use a sharpened rock. Some say that is cheating and I am embarrassed to admit my use of a crutch such as sharpening the rock. I am vigorously weening my self from sharpening as we speak but it takes time to break old habits. Especially habits one enjoys and dare I say addicted to. There . . . I said it.

Too bad I just sold this old grindstone. You could do some REALLY slow grinding with it!! It's about 15" in diameter and 4" thick.
