    Pizza Peel

    Good evening,
    My son has "commissioned me" to build a couple of pizza peels for his restaurant. I plan on using 1/4 sawn hard maple for dimensions of approximately 16" sq by 1/2" thick, tapering down to very thin on the business end. I want to glue up 4" wide boards to get my 16" width.
    I usually use Titebond III. Will this hold up to the heat of a pizza oven and typical abuse?
    Any suggestions?

    Brian-

    I can't answer from direct experience but I remember Wood magazine made a project of a peel and I think they used regular wood glue-

    I wouldn't think that the exposure to the heat would be too long???

    Not sure on the specifics, but I believe the testing for titebond III (type I testing?) included baking joints in an oven, as well as boiling them and rapidly cooling them, so I would imagine it's okay. You can find the specific test if you do a search, I can't think of where I read it off the top of my head.

    A Pizza Peel isn't used to cook on, just for moving things to/from the oven, and as a cutting board. Titebond will work just fine.

    Thanks, that's pretty much what I gathered from my searching. Real world answers are always best. I'm sure my son will let me know if the glue ever fails.
