I am finishing construction of a quarter-sawn white oak library chair/step from these plans:

It has some nice brass double pin hinges, brass screws, and brass finish washers. I want to protect these during the finish process.
For the screws and washers I'll just use steel screws, screwed part-way in, while I do the finishing.
The hinge is another matter. I need the hinges to hold the two halves together during finishing. The folding piece (that turns the chair into a table) will not stay upright on its own.
Can I either tape over the brass hinges to protect them, or cover them with plastic, or clean them off afterwards?
I am finishing with 1 coat danish oil, 1 coat of de-waxed shellac, then finished with several coats of wipe-on poly.
Any ideas on protecting that brass?
