Lee Valley is using torrefied maple on some of their plane and handsaw totes. It's beautiful.
I've also seen it in maple and poplar at one of the better lumber sellers in Portland, OR.

I can't answer for the others, but I use the Benchcrafted hardware for mine with the Crisscross support. This is rigged specifically with a degree or two of toe-in to make sure the vise chop contacts...
