I've done waterstones and oilstones. It works fine with proper prep. Oilstone was more problematic because, well, it's an OILstone. Scrub those edges with a stiff bristle brush and some Dawn...

That Keen Kutter is a great hatchet with excellent steel. Very sought after, especially with that exceptional etch/stamp. Great gift. Perhaps you can rehang it on the same handle?
It can be a bit intimidating until you actually dive in. I feel so lucky and privileged to have had a mentor that taught me to sharpen saws. Sure do miss him. He didn't look like he was smart enough...
