I made a couple boxes this weekend for SWMBO to use in the kitchen. I used box joints (my first ones) and based on advice from some SMC and others I cut the pins a bit long so there would be no gaps...
I have used the same method as John mentions above. Take some thicker stock and place the piece to be planed on top of it. Make sure it is secured with a stop block or sand paper or something.

I have the Powermatic 6" with levers. It is very easy to adjust and I have had no problems on that front. I have not used a jointer with wheels, but it sounds like you are fine either way.
