Mike, If I know the stock is prone to chip out, I either climb or bump cut. When you climb cut you do not feed the stock into the rotation of the bit, so on a table you feed the stock left to right. Normal cut on a table you feed the stock right to left.
When I cut thin stock, usually resaw veneers, I sandwich them between two pieces of MDF, let the veneer hang out just a tad, then using a flush trim compression spiral bit to make the veneer flush...
