Mesquite Finishing

I am building a counter and bar from Mesquite. Intended to finish with light Danish Oil topped with System 3 Epoxy. As counter and bar will be outside and subject to weather (shaded sun but with some rainwater impact) am wondering if it makes any sense to top the expoxy with Spar Varnish as further protection from elements. Would however multiple coats of Expoxy be sufficient?

I would check with System 3 on this. They have great products and you just need something with UV and Element protection. If you can finish a kayak with their stuff, I am sure they have something for this.
