Polycrylic cure time for pantry shelf use.

So I built a pantry shelf for behind the kitchen/basement door to hold mostly canned goods. Red Oak finished with 3 coats of Polycrylic yesterday ( Wednesday) It dries quick and today I mounted it to the wall. How long would you give the finish to cure before loading it with canned goods etc?

  2. I’m interested, tried a sample on ply and took about month to really harden

Personally, I feel a good month of curing is a best practice, but that's not always practical. This might be one of those cases, especially since it's going to be somewhat hidden. I'd still wait at least a week or longer if possible.
